Sparkling iced tea
An Arnold palmer-inspired drink combining freshly made iced tea with lemonade. It’s a bubbly surprise infused with lemony fruity flavours that is great for sharing.

- 6 lemons
- ½ cup honey
- 4 earl grey tea bags
- Fresh seasonal fruit (we used strawberries and blueberries)
- Lemonade
Method
- In a saucepan, combine the juice of four lemons, honey and three cups of water over medium-high heat. Bring to a simmer and cook for 5 minutes or until the honey has dissolved.
- Remove from the heat and add the tea bags. Leave to steep for 10 minutes before removing and discarding the tea bags.
- Transfer to a jug and place in the refrigerator to cool for a minimum of 2 hours or until chilled.
- Half fill short serving glasses with ice. Add fresh seasonal fruit, then pour over the cooled iced tea to fill the glasses halfway. Slice the remaining lemon.
- Top up each glass with lemonade, then garnish with lemon slices.
Top tip: Make this sparkling iced tea in a large pitcher and prepare in advance for a delicious drink that your guests will love.
