Berry eton mess shake

Transform your favourite summery dessert into a berry eton mess shake for the ultimate tasty treat. Made with a sweet raspberry coulis, fresh strawberries and topped with crumbled meringue, it’ll be hard to resist.

  • 1 cup fresh or frozen raspberries
  • ½ cup caster sugar
  • 300g fresh strawberries 
  • 2 ½ cups ice
  • 2 ½ cups milk 
  • Mini meringues 

Method


  1. In a small saucepan, heat the raspberries, sugar and a quarter cup of water over medium heat. Cook for 5-10 minutes or until the sugar has dissolved and the raspberries have broken down, stirring frequently. Strain through a sieve and set aside to cool to room temperature.
  2. Drizzle half of the raspberry coulis on the inside of short glasses and set aside in the fridge.
  3. Reserve a few strawberries for garnishing, then place the remaining strawberries in a blender with ice, milk and the remaining raspberry coulis. Blend until smooth, then pour into your prepared glasses. 
  4. Cut the reserved strawberries in half and thread onto skewers or toothpicks. Place on top of each glass to garnish.
  5. Crumble meringue over the top, then serve and enjoy immediately. 

Top tip: A scoop of ice cream and mini marshmallows make the perfect topping for these indulgent shakes.
