Slow cooker Mongolian-inspired beef
A Mongolian beef-inspired slow cooker meal that takes under 10 minutes to prepare. Let your slow cooker do all the work for you, so you can worry about other things. You’ll come back to tender beef coated in a dark and rich garlic, soy and ginger sauce.

- 1 kg beef chuck or rump steak, diced
- 3 tbsp cornflour
- 2 tbsp grated fresh ginger
- 3 cloves garlic, minced
- ½ cup soy sauce
- 3 tbsp brown sugar
- 2 carrots, peeled and sliced
Method
- In a slow cooker, stir together diced beef, cornflour, salt and pepper.
- Add ginger, garlic, soy sauce, brown sugar and three quarter cups of water.
- Stir until well combined then cover and cook on high for 4- 4 ½ hours. After 3 hours, add the carrots and cook for a final 1- ½ hours or until the beef is tender.
- Serve and enjoy!
Top tip: Compliment this Mongolian beef with a serving of rice and garnish with sliced spring onions, fresh coriander and toasted sesame seeds.
