Slow cooked BBQ beef brisket
Splendid for a summer gathering, this slow cooked beef is finished off on the BBQ for a succulently smokey brisket. Serve it up with coleslaw and crispy wedges for a delicious outdoor meal with whānau and friends.

- 1-1.2kg beef brisket
- 2 tsp ground paprika
- 1 onion, sliced
- 3 cloves garlic, minced
- ½ cup smokey BBQ sauce
- 1 Tbsp Worcestershire sauce
- 2 Tbsp honey
- 1 ½ cups beef stock
- 2 sprigs rosemary

Preheat your oven to 145°C bake. Season the beef with salt and pepper, sprinkle over the paprika and rub it into the beef.

Bring a drizzle of oil to medium-high heat in a large oven-proof dish. Cook the onions and garlic for 4-5 minutes or until translucent.

Add the BBQ sauce, Worcestershire, honey and beef stock and bring up to a simmer.

Nestle the seasoned beef into the dish and add the rosemary. Cover and place in the oven to cook for 3-3 ½ hours or until tender, basting every hour. Reserve the pan juices.

Preheat your BBQ to medium heat and brush with oil. Place the beef on the BBQ and cook for 5-8 minutes on each side or until browned and caramelised. Transfer the beef to a plate or board, cover and set aside to rest for 15-20 minutes before slicing. Serve with the reserved pan juices.
