Ginger beef and broccoli bowls

These saucy ginger beef and broccoli bowls are sure to make you the envy of your colleagues. Made in under 30 minutes, these nourishing bowls are delicious eaten fresh or reheated the next day. A great meal prep option to add to your rotation.

  • 1 broccoli, cut into small florets
  • 2 cloves garlic, minced
  • 1 Tbsp fresh grated ginger
  • 500g beef mince
  • 2 Tbsp soy sauce
  • 2 tsp brown sugar
  • 1 lime, cut into wedges

Method

  1. Bring a large frying pan to medium heat with a generous drizzle of olive oil. Stir fry the broccoli for 3-4 minutes until tender and remove from the pan. 
  2. Add another drizzle of olive oil in the same pan and sauté the garlic and ginger until fragrant. Add the beef mince and cook for 5-10 minutes or until golden brown, using a wooden spoon to break up the mince.
  3. Return the broccoli to the pan, add the soy sauce and brown sugar and stir fry for a couple of minutes to allow the sugar to dissolve and caramelise. 
  4. Spoon into serving bowls, serve with lime wedges and enjoy while hot or alternatively divide into lunchboxes and leave to cool before storing in the fridge to enjoy the next day.
Top tip:

Jazz up your bowls by serving over brown rice and garnishing with sesame seeds and chopped spring onion.
