Easy one-pot rice
All you need to whip up this family-friendly rice is one pot, eight ingredients and 40 minutes. Infused with rich savoury tomato flavours, beef mince, Mexican spice and mixed veggies, it’s an easy weeknight meal.

- 1 onion, diced
- 2 cloves garlic, minced
- 450g beef mince
- 1 pack (70g) Pams Burrito Mexican spice mix
- 1 can (400g) Pams diced tomatoes
- 1 ¾ cups vegetable stock
- 1 cup long-grain rice
- 1 ½ cups Pams frozen mixed veges
Method
- Bring a drizzle of oil to medium-high heat in a large saucepan. Sauté the onion and garlic for a few minutes or until softened.
- Add the beef mince and Mexican spice mix. Cook, while stirring for 4-5 minutes or until browned.
- Stir through the diced tomatoes, vegetable stock, rice and mixed vegetables. Season with salt and pepper.
- Bring to a simmer. Cover and cook for 15-20 minutes or until the rice is tender and the liquid has absorbed. Remove from the heat and allow to sit, covered for 5-10 minutes before serving.
Top tip: Garnish with a handful of freshly chopped coriander for a herbaceous addition.
To bulk up this meal stir in a can of drained and rinsed black beans before removing the pot from the heat.
