Ingredients
Method
Ingredients
- 800g baby potatoes
- 650g steak of your choice
- ½ onion, finely diced
- 1 clove garlic, mined
- ½ cup chicken stock
- 1 tbsp dijon mustard
- 3 tbsp sour cream or crème fraîche
Method
- Preheat your oven to 200ºC fan bake. Cut the potatoes in half and place them on a baking tray. Season with salt and pepper and toss with a drizzle of oil. Cook for 20-25 minutes or until cooked through and crispy.
- Bring a drizzle of oil to medium-high heat in a large frying pan. Season the steaks with salt and pepper. Cook for 3-4 minutes on each side for medium-rare or until cooked to your liking. Remove from pan, cover loosely with foil and set aside to rest.
- To make the sauce, bring a drizzle of oil to medium heat in a large frying pan. Cook the onion and garlic for a few minutes or until translucent. Add stock and bring to a simmer. Once simmering, stir through dijon mustard and crème fraîche. Season to taste with salt and pepper, then remove from the heat.
- Serve crispy potatoes alongside sliced steaks and drizzle over the sauce.
Top tip: Take your sauce to the next level by adding a cup of sliced mushroom with the onion and stirring through a large handful of chopped parsley into the sauce with the mustard.
