  • ½ cup Pams roasted and salted pistachios, shelled and roughly chopped 
  • 2 cups Pams rice snaps
  • ½ cup Pams desiccated coconut 
  • ½ cup Pams dried cranberries 
  • ½ cup dried apricots, roughly chopped
  • ¼ cup Pams glacé red cherries, roughly chopped 
  • 500g white chocolate, roughly chopped

Method


  1. In a large bowl combine pistachios, rice snaps, coconut, cranberries, apricots and cherries. Set aside a quarter cup of this mixture to sprinkle over the top of the slice. 
  2. Place the chocolate in a microwave-safe bowl and microwave on low for a minute. Stir and repeat until the chocolate has just melted. 
  3. Pour the melted white chocolate over the pistachio mixture and stir until well combined. 
  4. Transfer to a lined square cake tin. Scatter the reserved pistachio mixture over the top and gently press into the surface of the slice.
  5. Cover and set aside in the fridge for at least two hours or until set firm. Once set, remove from the tin and use a sharp knife to cut into portions. 

Top tip: For a gluten-free alternative, replace the rice snaps with half a cup of sunflower seeds and three-quarters of a cup of roughly chopped whole almonds.

  • To cut the Christmas slice, remove from the fridge 5-10 minutes before you want to cut it, then use a sharp knife that has been dipped in hot water and wiped clean.

  • Can I freeze white Christmas?
    • We do not recommend freezing white Christmas as the rice bubbles / rice Christmas can become soggy when defrosted.
  • Are rice bubbles the same as puffed rice?
    • Yes, rice bubbles are the same as puffed rice and sometimes known as rice Krispies!
  • Can you overcook white chocolate?
    • Yes, white chocolate can easily become overcooked, so it is best to keep an eye on it when melting it, and stir regularly.
