Pumpkin scones
These maple-sweetened pumpkin scones are perfect for morning tea, afternoon tea, or even high tea. They are easy to prepare, healthy and delicious!

- 1 cup cold mashed pumpkin
- 1 tablespoon maple syrup
- 1 egg
- 2 cups wholemeal flour
- 1 tablespoon butter
- 1/2 teaspoon mixed spice
- 2 teaspoons baking powder
- 1 tablespoon milk
- 1/4 cup pumpkin seeds
Method
- In a bowl combine flour, maple syrup, baking powder and mixed spice. The combine it with the butter using a knife and your finger tips to work the butter into the flour mixture. Add the egg, mashed pumpkin and milk and mix until just combined.
- Put a touch more than a spoonful per scone onto a lined tray and add a handful or less of pumpkin seeds to the top
- Cook for 10-15 minutes on 200 degrees or until golden brown.
