Melted snowman cupcakes
Bring comfort and happiness into anyone’s home with these loveable melted snowman cupcakes. Vanilla cupcakes, decorated with marshmallow snowmen melting into a light and fluffy icing make these tasty treats a winner.

- 300g Pams pure butter, softened
- 1 tsp vanilla extract
- ¾ cup caster sugar
- 2 eggs
- 1 cup self-raising flour
- ⅓ cup milk
- 1 ¼ cups Pams icing sugar
- 12 white marshmallows
- White chocolate, melted

Method
- Preheat your oven to 170°C fan bake. In a large bowl, beat together 120g butter, vanilla and caster sugar until light and fluffy. Add the eggs and beat until well combined. Sieve in the flour, pour in a quarter cup of milk and mix until just combined.
- Spoon the mixture amongst a 12-hole lined cupcake tray. Bake for 15-20 minutes or until the cupcakes are lightly golden and a skewer inserted into the centre comes out clean. Cool the cupcakes on a cooling rack.
- To make the icing, place the remaining butter in a large bowl and beat until pale. Add the icing sugar and remaining milk. Beat until light and fluffy. Reserve a quarter cup of icing. Pipe or spread the remaining icing onto the cupcakes.
- Colour the white chocolate as desired, then pipe eyes, mouths and noses on each marshmallow to create snowman faces. Place a marshmallow on each cupcake.
- Colour the reserved icing as desired and pipe on dots for the snowman buttons.
Top tip: Decorate your snowmen with pretzel stick arms and dark chocolate eyes and mouths.
