
Courgette and bacon slice

This easy courgette and bacon slice makes eating your greens easy in the tastiest of ways. Serve with your favourite chutney and a leafy green salad for a meal the whole family will enjoy.
Ingredients
6 eggs
4 medium courgette, grated
¾ cup self-raising flour
¾ cup grated tasty cheese
1 onion, diced
2 cloves garlic, minced
150g bacon, diced
Method
Preheat your oven to 180°C fan bake and line a slice tin.
Lightly beat the eggs in a large bowl.
Place the grated courgette into a tea towel or cheesecloth and squeeze the liquid out.
Add the grated courgette to the egg mixture along with the onion, garlic and bacon. Mix well.
Season well with salt and pepper and stir through the flour and grated cheese. Pour into the lined tin and use a spoon to smooth the top.
Bake for 35-40 minutes or until the egg mixture is set in the middle and golden brown. Leave to cool for 10 minutes before cutting into squares and serving warm or cold.
