Courgette and bacon slice
This easy courgette and bacon slice makes eating your greens easy in the tastiest of ways. Serve with your favourite chutney and a leafy green salad for a meal the whole family will enjoy.

- 6 eggs
- 4 medium courgette, grated
- ¾ cup self-raising flour
- ¾ cup grated tasty cheese
- 1 onion, diced
- 2 cloves garlic, minced
- 150g bacon, diced
Method
- Preheat your oven to 180°C fan bake and line a slice tin.
- Lightly beat the eggs in a large bowl.
- Place the grated courgette into a tea towel or cheesecloth and squeeze the liquid out.
- Add the grated courgette to the egg mixture along with the onion, garlic and bacon. Mix well.
- Season well with salt and pepper and stir through the flour and grated cheese. Pour into the lined tin and use a spoon to smooth the top.
- Bake for 35-40 minutes or until the egg mixture is set in the middle and golden brown. Leave to cool for 10 minutes before cutting into squares and serving warm or cold.
