Anzac biscuits
With golden syrup, coconut and a hint of cinnamon these Anzac biscuits are deliciously soft and chewy. It’s a quick and easy recipe that’s sure to become your go-to.

- 1 cup plain flour
- 1 ½ tsp ground cinnamon
- 1 ½ cups rolled oats
- 1 cup desiccated coconut
- ½ cup white sugar
- ¼ cup brown sugar
- 125g butter, cubed
- ¼ cup golden syrup
- 1 tsp baking soda
Method
- Preheat your oven to 160°C.
- In a medium bowl, sift together flour and cinnamon. Add rolled oats, coconut, caster sugar and brown sugar. Mix well to combine.
- Melt together butter, golden syrup and two tablespoons of water in a small saucepan over low-medium heat. Remove from the heat and stir in baking soda. Add the butter mixture to the flour mixture and stir until well combined.
- Roll tablespoons of the biscuit mixture into balls and place on the prepared tray about 5cm apart. Press down to flatten slightly and bake for 15-20 minutes or until golden brown.
- Set aside to cool for 5 minutes, before transferring to a wire rack to cool completely.
Top tip: For a chewy Anzac biscuit bake for 15-16 minutes and for a crunchier biscuit cook for 18-20 minutes.
