Caramelised spring onion salad

- 2-3 spring onions
- 1/4 cup balsamic dressing
- 100g crumbly feta
- Mesclun salad
Method
- Cut spring onions into 2inch lengths, wrap in foil, pour over balsamic dressing, bake at 180c for approx 20-30 until yummy.
- Let cool down.
- Add cooked spring onion (including juices) and crumbled feta to mesclun salad.
- Toss and enjoy!
