Easy eggplant pizza
Great for a snack or meal, these pizzas are gluten free, super tasty and not just for the kids. The possibilities are endless with toppings of your choice.

- 1 large eggplant, sliced into 1cm rounds
- ⅓ cup tomato passata
- ½ cup grated mozzarella cheese
- Toppings of your choice (we used sliced cherry tomatoes and fresh basil)
Method
- Season the eggplant with salt, then set aside for 10 minutes. Use a paper towel to wipe off the excess water. Preheat your oven to 200°C fan bake.
- Place the eggplant slices on a baking tray, drizzle with olive oil and bake for 15-20 minutes or until almost tender.
- Spread tomato passata on each eggplant slice. Top with mozzarella cheese and toppings of your choice.
- Bake for a further 3-5 minutes or until the cheese has melted.
- Set aside to cool for 5 minutes before serving.
Top tip: Get inspired with your favourite pizza toppings. Sliced olives, capers, diced capsicum, chilli flakes and sliced mushroom are just some of many options.
