Sausage and cherry tomato pasta
A delicious sausage pasta made quick and easy using store bought sausages and Italian diced tomatoes. All the flavour comes from the sausage meat so get creative with the flavours.

- 500g Pams penne pasta
- 1 Tbsp olive oil
- 1 pack of store-bought sausages
- 400g cherry tomatoes
- 1 can Pams Basil and Oregano Tomatoes
- Salt and Pepper
- ½ cup frozen peas
Optional:
- Grated parmesan
- Fresh basil
Method
- Fill a pot with water and season with salt. Cook the pasta according to packet instructions. Reserve one cup of pasta water. When the pasta is nearly done, tip in the frozen peas and blanch for 30 seconds. Drain the pasta and peas and set aside.
- While the pasta is cooking, heat olive oil in a pan over medium heat. Remove the sausage meat from its casing and fry over a medium heat until golden and crispy.
- Add cherry tomatoes and fry for 3 - 5 minutes until just starting to blister. Pour in tinned tomatoes, season and stir to combine. Lower the heat and simmer for 10 minutes.
- Add the pasta and peas to the pan and mix well to combine. Loosen with reserved pasta water if needed. Serve and enjoy.
Top tip:
- Add grated parmesan cheese and fresh basil for added flavour.
Swap:
- Any pasta will work with this recipe so can swap for spaghetti or spiral pasta if preferred. Any sausage will work for this so choose your favourite meat as the base for this pasta.
