Puttanesca

Inspired by traditional Italian Puttanesca, this pasta is simple yet delicious. Black olives and capers cooked in a rich tomato sauce, capture the essence of Italy at home in under 25 minutes.

  • 400g dried spaghetti
  • 4 garlic cloves, minced
  • 1 tsp chilli flakes
  • ¾ cup pitted black olives, roughly chopped
  • 2 Tbsp capers, roughly chopped
  • 1 jar (510g) Pams Classic Tomato Pasta Sauce
  • Handful of fresh parsley leaves, roughly chopped

Method

  1. Cook the spaghetti as per the pack instructions.
  2. Meanwhile, bring a large pan to medium heat with a drizzle of olive oil. Add the garlic and cook for 2 minutes or until fragrant.
  3. Increase to medium-high heat and stir in the chilli flakes, olives and capers. Stir through the pasta sauce and simmer for 5 minutes. Season with salt and pepper to taste.
  4. Drain the cooked pasta and add to the pan with the sauce. Toss with tongs to coat well.
  5. Place into serving bowls and finish with a sprinkle of chopped parsley.
Top tip: For the full Italian experience and a more intense umami flavour, add four chopped anchovies into the sauce along with the olives and capers.
