The mac dad of chocolate cakes

- 170g butter
- 1 cup brown sugar
- 2 eggs
- 1 & 1/2 tsp baking soda
- 1 & 1/2 cups milk
- 2 cups flour - I use high grade only - but standard is ok
- 3-4 tsp baking powder
- 1/2 cup cocoa powder
- chocolate icing:
- 250g butter
- 2 cups icing sugar
- 1/2 cup cocoa powder
- 1/4 cup milk
Method
- Soften butter and brown sugar in microwave.
- Mix well it will go a pale brown colour.
- Add eggs 1 by 1, cream until light and fluffy.
- Add remaining ingredients - dont over mix - it will be a wet cake batter.
- Cook at 180 for 30 - 40 mins.
Icing:
- Soften butter in microwave.
- Sift all other ingredients.
- Warm milk in microwave.
- Mix well.
- You can you do them in muffin tins too, or in a log shape tin.
