Mild Thai Green Chicken Curry

- 1 Simply Dinner Mild Thai Chicken Green Curry Kit (each kit includes 1½ cups rice, 400g chicken breast, 1 carrot, 250g green beans, 300g Annabel's Go To Fragrant Curry Sauce, 400ml coconut cream)
- Cooking Oil
- Salt and pepper
- Water
Optional Extras:
- Fresh corriander
Method
- Place rice in a large pot with 2¼ cups water and a little salt. Bring to a boil over a high heat,
then cover and reduce to lowest heat. Cook for 13 minutes then turn off the heat and allow to
stand without lifting the lid. - While rice is cooking, cut chicken into thin strips. Peel carrots, halve lengthwise and thinly angle
slice. Trim and halve the beans. - Heat 1 tbsp oil in a large frying pan or pot over high heat. Add chicken and carrots and stir-fry
for about 5 minutes until chicken is no longer pink. - Add Annabel’s Go To Fragrant Curry Sauce, coconut cream and ½ cup water and bring to a
simmer. Reduce heat, add beans, cover and simmer for 10 minutes. Check seasoning and adjust
to taste with salt and pepper.
To Serve:
- Fluff the rice with a fork. Divide between 4 bowls and top with the green curry. Enjoy!
Optional:
- If using coriander, chop coarsely and sprinkle over curry to serve.
