Spiced chicken couscous
Loaded with vegetables, this quick and tasty one-pot meal is ready in under 30 minutes. Substitute the paprika for your favourite spices and seasoning for a customised version of this spiced chicken couscous.

- 1 onion, finely diced
- 2 capsicum, finely diced
- 2 cloves garlic, minced
- carrots, finely diced
- 2 Tbsp smoked paprika
- 500g skinless chicken breast, diced
- 2 courgettes, finely diced
- 1 cup corn kernels
- 400g couscous
- ¼ cup sliced almonds, toasted
Method
- Bring a drizzle of oil to medium-heat heat in a large pot. Sauté the onion, capsicum and garlic for 5 minutes or until softened.
- Increase the heat to high and stir through the carrots and paprika, then add the chicken and stir fry until the chicken is almost cooked.
- Add courgette, corn and two cups of water. Season with salt and pepper. Stir to combine, then bring to a boil.
- Once boiling, turn off the heat. Stir through couscous, cover and leave to sit for 10 minutes for the couscous to absorb the liquid.
- Fluff the couscous with a fork. Sprinkle over the sliced almonds and serve.
Make this meal gluten free by swapping out the couscous for some quinoa. Substitute the chicken for firm tofu or chickpeas for a delicious vegetarian option.
