Chicken fajita traybake
These no-fuss Mexican-inspired chicken fajitas are sure to spice up your meal time and become a family favourite. It’ll be on the table in under half an hour.

- 4 large chicken breasts, cut into 2cm strips
- 2 capsicums, cut into 2cm slices
- 2 red onion, cut into wedges
- 1 pack (40g) Taco Mexican Spice Mix
- 6 tortillas
- ½ cup sour cream
Method
- Preheat your oven to 200°C fan bake. Place the chicken, capsicum and red onion in a large bowl, lightly drizzle with olive oil, season with salt and pepper and toss to coat.
- Sprinkle over the Mexican spice mix, toss to combine and spread out on a large baking tray.
- Bake for 20-25 minutes, or until the vegetables are tender and the chicken is cooked through.
- Serve on the table family style, alongside warmed tortillas and sour cream.
