Ti Ora iced summer fruit tea

- 12 mint leaves
- 4 Ti Ora Summer Fruit with New Zealand Manuka Leaf tea bags
- 1 cup freshly boiled water
- 1/4 cup simple syrup
- 2 cups diced and peeled honey dew melon
- 12 ice cubes
- Ice, melon balls or wedges and mint for garnish
Method
Simple syrup
- Place 1 cup sugar and 1 cup water into a saucepan.
- Bring to the boil, stirring.
- Once sugar has dissolved remove from the heat and allow to cool.
Method
- Infuse the mint leaves and Ti Ora tea bags in the freshly boiled water for 5 minutes. Remove the tea bags and mint, stir in the simple syrup and leave to cool to room
temperature. - Place the honey dew melon into a blender and blend until smooth. Then mix with cooled tea and ice cubes.
- Add extra ice to the glass.
- Pour the tea mixture into the glass, then allow the layers to settle.
- Garnish with melon balls or wedges and mint.
