  • 12 mint leaves
  • 4 Ti Ora Summer Fruit with New Zealand Manuka Leaf tea bags
  • 1 cup freshly boiled water
  • 1/4 cup simple syrup
  • 2 cups diced and peeled honey dew melon
  • 12 ice cubes
  • Ice, melon balls or wedges and mint for garnish

Method

Simple syrup
  1. Place 1 cup sugar and 1 cup water into a saucepan.
  2. Bring to the boil, stirring.
  3. Once sugar has dissolved remove from the heat and allow to cool.
Method
  1. Infuse the mint leaves and Ti Ora tea bags in the freshly boiled water for 5 minutes. Remove the tea bags and mint, stir in the simple syrup and leave to cool to room
    temperature.
  2. Place the honey dew melon into a blender and blend until smooth. Then mix with cooled tea and ice cubes.
  3. Add extra ice to the glass.
  4. Pour the tea mixture into the glass, then allow the layers to settle.
  5. Garnish with melon balls or wedges and mint.
