Hummingbird oomph! balls
Pure summer bliss all rolled up in tiny heavenly bites. Dates, pistachio, cacao, desiccated coconut powered by a bit of Hummingbird Oomph! come together to create a sweet, sour, coffee flavoured buzz that will be a hit this summer.

- 1⁄4 cup strong brewed Hummingbird Oomph! Plunger coffee
- 1⁄2 cup rolled oats
- 1⁄2 cup pitted medjool dates
- 1⁄2 cup dried apricots
- 1⁄2 cup raw almonds
- 1⁄4 cup pumpkin seeds
- 2 tbsp cacao powder
- 1 tbsp coconut oil
- 2 tbsp honey
- Finely chopped pistachio nuts, desiccated coconut or cacao powder for coating
Method
- Place the coffee, rolled oats, dates, apricots, almonds, pumpkin seeds, cacao powder, coconut oil and honey in the bowl of a food processor. Process until the ingredients bind together.
- Roll into even sized balls.
- Coat balls with chopped pistachios, coconut or cacao powder.
- Place on a tray lined with baking paper.
- Refrigerate until ready to serve.
