Pure summer bliss all rolled up in tiny heavenly bites. Dates, pistachio, cacao, desiccated coconut powered by a bit of Hummingbird Oomph! come together to create a sweet, sour, coffee flavoured buzz that will be a hit this summer.

  • 1⁄4 cup strong brewed Hummingbird Oomph! Plunger coffee
  • 1⁄2 cup rolled oats
  • 1⁄2 cup pitted medjool dates
  • 1⁄2 cup dried apricots
  • 1⁄2 cup raw almonds
  • 1⁄4 cup pumpkin seeds
  • 2 tbsp cacao powder
  • 1 tbsp coconut oil
  • 2 tbsp honey
  • Finely chopped pistachio nuts, desiccated coconut or cacao powder for coating

Method

 

 

  1. Place the coffee, rolled oats, dates, apricots, almonds, pumpkin seeds, cacao powder, coconut oil and honey in the bowl of a food processor. Process until the ingredients bind together.
  2. Roll into even sized balls.
  3. Coat balls with chopped pistachios, coconut or cacao powder.
  4. Place on a tray lined with baking paper.
  5. Refrigerate until ready to serve.
