5-ingredient Mediterranean-style steak

- 2 scotch steaks
- 1 eggplant, diced
- 250g cherry tomatoes
- 2 cloves garlic, thinly sliced
- Handful of fresh basil leaves, sliced
Method
- Place a frying pan over medium-high heat with a generous drizzle of olive oil. Pat the steaks dry with a paper towel and season with salt and pepper, then sear in the pan for two minutes on each side or until golden brown. Set aside.
- Add the diced eggplant, tomatoes and garlic to the pan with another drizzle of olive oil. Cook while stirring until the eggplant and tomatoes are tender. Season to taste with salt and pepper.
- Slice the steaks into 1-2cm thick slices, then nestle the steaks back into the pan with the vegetables and cook for a further minute or two to allow the steak to finish cooking.
- Sprinkle the basil over the steak, then serve while hot.
