Meat balls with satay sauce
These tasty meatballs are wonderfully easy to prepare and baking makes them easy to cook. The satay sauce is sure to be a winner, but they’re equally good with BBQ sauce or tomato sauce.

- Meatballs:
- 750g mince
- 2 cups bread crumbs
- 1 chopped onion
- juice of 1 lemon
- 2 teaspoons chicken stock
- 2 teaspoons basil
- Sauce:
- 1 tablespoon olive oil
- 2 teaspoons crushed garlic
- 2 teaspoons ginger
- 1 teaspoon coriander
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice
- hot chilli sauce
- ¼ cup brown sugar
- 2 tablespoons peanut butter
Method
Meatballs:
- Blend all ingredients in a blender.
- Form into balls.
- Bake at 180C for 30 minutes
Sauce:
- Heat the above ingredients.
- Combine 2 tablespoons of cornflour and 1 cup of water then add to the mixture to thicken.
Serve on rice with a side salad.
