BBQ steak with hummus and tomato salsa
Dine outdoors in the sunshine with this summer ready BBQ steak. Pre-made hummus and a beautiful fresh tomato salsa with charred capsicum make this a superb end to any day. Accompany with tortilla corn chips or pita chips and a summer leafy green and avocado salad for an exemplary meal.

- 1 capsicum
- 4 sirloin steaks, room temperature
- 2 cloves garlic, minced
- ¼ cup fresh herbs, roughly chopped (we used parsley)
- 1 lemon
- 4 small tomatoes, diced
- 1 cup hummus
Method
- Preheat your BBQ or grill pan to high heat and brush with oil. Place the capsicum on the grill and cook for 10-20 minutes or until the skin chars, turning occasionally. Transfer to a bowl, then cover with cling film and set aside for 10 minutes.
- Meanwhile, in a large bowl combine the sirloin steaks, garlic, half the herbs, lemon zest, a drizzle of oil, salt and pepper. Mix well to combine, then grill over medium-high for 3-4 minutes on each side for medium rare or until cooked to your liking. Set aside to rest.
- Remove the charred skin from the capsicum and discard the stem and seeds. Roughly chop the capsicum and place in a medium bowl.
- Add the remaining herbs, juice from half a lemon, tomatoes, salt and pepper. Mix well to combine. Cut the remaining lemon into wedges.
- Serve the rested steaks with the hummus, tomato salsa and lemon wedges. Enjoy!
Tips:
- Toss through some finely diced red onion in the salsa for a delicious side.
