- 1 rockmelon or honeydew
- 3 Tbsp caster sugar
- 1 lemon
Method
- Remove the skin and seeds of the rockmelon, cut into cubes and place on a lined baking tray. Place in the freezer for a minimum of 4-6 hours or overnight until frozen.
- In a small bowl whisk together caster sugar and the zest and juice of the lemon until well combined.
- Blitz the frozen rockmelon and sugar mixture in a food processor until smooth, scraping down the sides as necessary.
- Serve immediately or transfer into a container and store in the freezer.
