- 1 tbsp Pams pure butter or Pams salad and cooking oil + extra for toasties (optional)
- 1 onion, diced
- 2 (400g) cans Value chopped tomatoes in juice
- 2 cups vegetable stock or water
- 8 slices of Molenberg original toast bread
- 2 cups Pams Edam cheese, grated
Method
- Heat a tablespoon of butter or oil in a large frying pan over medium heat. Sauté the onion until softened and lightly browned.
- Add chopped tomatoes and stock and cook on low heat for 10-15 minutes.
- Cool the tomato soup slightly before using a blender or a hand blender to blend until smooth. Season to taste.
- Spread butter or oil on one side of each slice of bread if desired, then flip over four slices and top with grated Edam cheese. Top with the remaining bread buttered side up.
- Toast in a pan or a sandwich press until golden brown and melted. Slice in half if desired, then serve and enjoy alongside the tomato soup.
Top tip: A teaspoon of dried mixed herbs or paprika make a flavourful addition when cooked in with the onions.
