Smoked Salmon leek and potato soup
Serve up this Finnish-inspired creamy smoked salmon, leek and potato soup for a delicious weeknight meal in 35 minutes. Leek, carrot and potatoes combined with hot smoked salmon, dill and cream.

- 1 leek, sliced
- 2 carrots, diced
- 500g potatoes, diced
- 6 cups chicken or vegetable stock
- 1 Tbsp dried dill
- ⅓ cup cream
- 180g hot smoked salmon, flaked
Method
- Heat a large saucepan to medium-high heat. Add a drizzle of oil or a knob of butter and cook the leek and carrot for 8-10 minutes or until tender.
- Add potatoes, stock and dill. Bring to the boil.
- Once boiling, reduce to a simmer, cover and cook for 10-15 minutes or until the potatoes are tender.
- Stir through cream and three quarters of the salmon, then cook for 5 minutes or until heated through. Season with salt and pepper to taste.
- Divide the soup into bowls and top with the remaining salmon. Serve while hot.
Top tip: Garnish your bowls of soup with chopped chives or coriander for added flavour.
