Gazpacho-inspired tomato soup
Try this gazpacho-inspired tomato soup the next time you're after a refreshing summer meal. Boasting fresh seasonal produce with mixed tomatoes, capsicum and cucumber. It’s packed full of vegetables and it tastes fantastic too with only six ingredients.

- 800g mixed tomatoes
- 1 capsicum, deseeded
- ½ cucumber, peeled
- ¼ red onion
- 2 cloves garlic
- 2 Tbsp red wine vinegar
- ¼ cup olive oil
Method
- Blitz all the ingredients in a blender until smooth.
- Season to taste with salt and pepper.
- Place in the fridge to chill for a few hours.
- Serve and enjoy chilled.
