25 minute pesto chicken tortellini
Your weeknight meal has never been easier with this super simple dish, packed full of flavour and ready in less than 30 minutes. Our tamariki particularly enjoy this one with the pops of cherry tomatoes, asparagus and grilled chicken tossed through basil pesto.

- 400g boneless chicken, diced
- 300g pack Pams Tortellini
- 1 bunch of asparagus, roughly chopped
- 1 cup cherry tomatoes, halved
- ½ jar (90g) Pams Basil Pesto
Method
- Heat a drizzle of olive oil in a large pan over medium-high heat. Add the chicken to the pan, season, and cook for 5-10 minutes until golden brown and cooked through.
- While the chicken is cooking, cook the tortellini as per pack instruction and reserve ¼ cup of the cooking liquid.
- Add the asparagus to the chicken, and cook for a few minutes or until the asparagus is just tender, then add the tomatoes and cook for a minute more.
- Stir in the pesto and a splash of the reserved pasta water, then fold in the cooked tortellini. Cook for a couple of minutes to warm through, then season to taste if required and serve.
Top tip:
Fold through a bag of Pams baby spinach with the cooked tortellini to add to your 5+ a day, and garnish with a sprinkle of freshly grated parmesan for a tasty finish.
