One tray tarakihi bake
Ready in under 25 minutes, this one tray Tarahiki bake couldn’t be easier. Baked to perfection with roasted chickpeas, capsicum and cherry tomatoes and finished with a squeeze of fresh lemon juice.

- 1 can (400g) chickpeas, drained and rinsed
- 1 onion, sliced
- 2 capsicum, thinly sliced
- 250g cherry tomatoes
- 2 cloves garlic, thinly sliced
- 1 tsp paprika
- 4 Tarakihi fillets
- 1 lemon, cut into wedges
Method
- Preheat your oven to 180°C fan bake.
- Add chickpeas, onion, capsicum, cherry tomatoes, garlic and paprika to a large baking dish. Drizzle with oil and toss to combine.
- Place in the oven to bake for 10 minutes.
- Nestle the Tarakihi fillets in the baking dish, drizzle lightly with oil and season with salt and pepper. Return to the oven to bake for a further 8-10 minutes or until the Tarakihi is cooked through and flakes easily with a fork.
- Serve with lemon wedges.
Top tip: Garnish with fresh parsley leaves and serve with crispy potatoes or crusty bread for a marvellous meal.
