BBQ fish and tomato salad

- 2 tsp dried mixed herbs
- 2 cloves garlic, minced
- 1 tsp ground paprika
- 4 firm white fish fillets of your choice
- 400g mixed tomatoes, cut into wedges or chunks
- ¼ red onion, finely diced
- 1 avocado, diced
- 1 cucumber, diced
Method
- Preheat your BBQ or grill pan to medium-high heat. Pat the fish dry with a paper towel.
- In a small bowl combine mixed herbs, garlic, paprika and a generous drizzle of oil. Season with salt and pepper.
- Pour the mixture over the fish and spread on both sides. BBQ the fish for 3-4 minutes on each side or until golden brown and cooked through.
- In a large bowl toss together tomatoes, red onion, avocado and cucumber with a drizzle of oil. Season with salt and pepper.
- Serve BBQ fish with the tomato salad. Enjoy.
