Easy peach tart
Made for sharing with friends and whānau this easy free-form peach tart is flaky, golden and scrumptious with juicy peaches. Serve this fruity summer tart with ice cream or whipped cream for a delicious dessert.

- 3 Tbsp caster sugar
- 1 Tbsp cornflour
- Juice of ½ lemon
- 4 fresh peaches, sliced
- 1 sheet Pams flaky puff pastry, defrosted
- 1 egg, beaten
Method
- Preheat your oven to 180°C fan bake.
- In a large bowl mix sugar, cornflour and lemon until well combined. Add the peaches and toss to coat.
- Place the puff pastry on a lined baking tray and arrange the peaches on top, leaving a 4cm border around the edges. Gently fold the edges of the pastry over the peaches.
- Brush the egg over the pasty and place in the oven to bake for 20-30 minutes or until golden brown and crisp.
Top tip: Take this tart up a notch, by adding a teaspoon of vanilla extract and a teaspoon of ground cinnamon to the peaches.
Garnish with roughly chopped pistachios for an added crunch.
