Creamy coffee cake
Cheats dessert made with a cream cheese whip, digestive biscuits soaked in coffee and a marbled chocolate top.

- 250g condensed milk
- 200g cream cheese, room temperature
- 2 ½ cup cream
- ⅓ cup milk, warmed
- ¼ cup espresso or instant brewed coffee
- 400g digestive biscuits
- 100g dark chocolate, chopped
- 100g white chocolate, chopped
Method
- In a large bowl, beat the condensed milk and cream cheese until smooth. Add two cups of cream and whip until light and fluffy.
- Combine the milk and espresso in a small bowl. Dip half of the biscuits in the milk and line the bottom of a serving dish.
- Spoon half of the whipped cream filling over the cookies and spread into an even layer. Repeat the layers.
- Place the dark chocolate and a third cup of remaining cream in a microwave safe bowl. Microwave in 30 second increments until completely melted, stirring well between each. Repeat with the white chocolate and remaining cream.
- Place spoonfuls of the dark and white chocolate over the top of the cake and use a spoon to marble the chocolate. Serve and enjoy.
