BBQ chicken legs with asparagus
Ignite that BBQ and get excited for summer with these BBQ chicken legs with asparagus. Marinated in a lemon, paprika and thyme marinade, these chicken legs are grilled to perfection and served alongside BBQ asparagus and onions.

- 3 lemons
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 2 Tbsp fresh thyme leaves or 1 Tbsp dried thyme
- 3 cloves garlic, minced
- 6 whole chicken legs
- 2 bunches asparagus, trimmed
- 2 onions, cut into wedges
- 100g feta
Method
- In a large bowl, combine a generous drizzle of olive oil with the zest and juice of two lemons, paprika, cumin, thyme, garlic cloves, salt and pepper. Reserve half of the marinade.
- Pat chicken dry with a paper towel and score the skin. Add to the bowl of marinade and toss to coat. Set aside while you preheat your BBQ or grill pan to medium-high heat.
- Brush your bbq with oil, then cook the chicken for 4-5 minutes on each side or until golden brown. Cover and cook for an additional 25-30 minutes or until cooked through, turning frequently and basting with the reserved marinade during cooking.
- Drizzle the asparagus and onions with olive oil and season with salt and pepper. Grill for 5 minutes or until tender. Cut the asparagus into thirds and toss it together with the zest and juice of the remaining lemon.
- Serve the BBQ chicken alongside the asparagus and onions. Crumble over the feta, then enjoy.
Top tip: Toss a bag of your favourite leafy salad greens with the asparagus, an extra drizzle of olive oil and freshly chopped chives for a scrumptious summer salad.
