- Brioche French Toast
- 8 slices Pams Finest Brioche Loaf
- 4 large eggs, lightly beaten
- ½ cup milk
- ½ cup cream
- 3 tablespoons caster sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- Butter, to fry
- Blueberries, to serve
- Maple syrup, to serve
- Grated lemon zest, to serve
- Icing sugar, to serve
Method
In a large shallow dish, whisk together eggs, milk, cream, sugar, vanilla and cinnamon. Working in batches, dip brioche slices in egg mixture, turning once, until moistened but not soggy.
In a nonstick frying pan, cook slices in butter over medium heat until golden brown. Flip to cook the other side.
Top with blueberries, syrup, zest and a dusting of icing sugar.
