Sunset mocktail
Impress all your whānau and friends with this magnificently layered sunset mocktail. It’s as pretty as a picture and the ultimate excuse to bring out that new drinkware. Watch as the cranberry syrup slowly trickles down the orange and soda layers to create an ombre effect. Suitable for evening drinks as the sun goes down.

- 1 cup cranberry juice
- ⅔ cup caster sugar
- 1 orange
- Ice cubes
- 2 ¾ cups orange juice
- 1 ½ cups soda water
Method
- Bring cranberry juice, sugar and the juice of half an orange to a simmer in a small saucepan over medium-high heat.
- Simmer for 5 minutes, then remove from the heat and set aside to cool to room temperature.
- Fill tall glasses with ice. Pour orange juice into each glass, then top up with soda water.
- Slowly pour the cranberry syrup into each glass and allow it to settle at the bottom.
- Slice the remaining orange and garnish your mocktails, then serve and enjoy.
Top tip: Prepare your cranberry syrup in advance and keep it in the fridge for up to a month.
Complete your mocktail with a sprig of mint for a pop of freshness.
