Blueberry mojito mocktail
When the weather starts heating up, keep cool with our fresh and fruity mocktail. Ideal for serving at parties or simply sipping by the pool, the refreshing flavours of berries, mint and lime are guaranteed to make this drink a firm favourite.

- ½ cup Pams Sugar
- 125g fresh blueberries
- 1 bunch fresh mint (reserve 4 sprigs for garnish)
- ¼ cup lime juice
- Ice cubes
- 2-3 cups soda water
- 1 lime, cut into wedges
Method
- To make a sugar syrup, place the sugar into a small saucepan with ½ cup of water and heat over medium heat, stirring, until the sugar dissolves. Remove from the heat and allow to cool.
- Divide the blueberries and mint between 4 glasses (we used the Spiegelau tall tumbler). Using a cocktail muddler or the end of a wooden spoon, muddle together in the bottom of each glass. Add 1-2 tablespoons of the sugar syrup to each glass, and 1 tablespoon lime juice. Top each glass with ice then fill with soda water. Garnish with lime wedges and extra mint sprigs.
