Honey, ginger and mint cordial
Spruce up your drinks this summer with a four ingredient honey, ginger and mint cordial. Incorporate into delicious mocktail or cocktail concoctions or serve with still water, sparkling water or soda water over ice.

- 1 ½ cups caster sugar
- ½ cup honey
- 5cm piece of fresh ginger, peeled and finely sliced
- 2 sprigs mint
Method
- In a large saucepan combine sugar, honey, ginger and 3 cups of water. Bring to the boil over a medium-high heat.
- Cook for 3-5 minutes or until the sugar has dissolved.
- Add the mint sprigs and remove from the heat. Stir well to combine, then set aside to cool completely.
- Once cool, strain the mixture and pour into a sterilised bottle or jar.
- Store in the fridge for up to one month.
