Meat-lovers traybake
Dedicated to meat lovers, this inspired traybake has bbq flavoured meatballs, bacon and a rich herby tomato sauce. Serve with seasonal salad greens and crusty bread for a sensational meal.

- 500g beef mince
- 1 egg, beaten
- 2 cloves garlic, minced
- 1 Tbsp bbq sauce
- 1 small onion, finely diced
- 250g streaky bacon
- 2 cans (400g) diced tomatoes with herbs
Method
- Preheat your oven to 200°C fan bake.
- In a large bowl mix together the beef mince, egg, garlic, bbq sauce, onion, salt and pepper. Roll into 12 balls and place in a large roasting pan.
- Arrange the bacon around the meatballs. Place in the oven to bake for 15 minutes or until the bacon and meatballs are golden brown.
- Spoon the diced tomatoes into the pan. Return to the oven to cook for a further 10 minutes or until the meatballs are cooked through.
- Leave to sit for 5 minutes before serving, then enjoy!
Top tip: Before returning to the oven to bake, add in some mixed olives and a sprinkling of grated cheese over the top for a flavourful twist.
